The Bellini is always a welcome addition to any celebration, so the plum Bellini is the perfect touch for any Christmas party. What's more Christmassy than spiced plum anything?
6 plums, 30g sugar, 6 pepper corns, inch ginger, 500ml prosecco
Slice your plums and add them, along with the sugar, pepper and ginger to a pan and warm over a low heat until the fruit is syrupy and soft. Push the plums though a seive, letting the juice pour into a jug, discard the rest. Add the juice to champagne flutes, top with prosecco and toast the most magical time of the year.
