No Sri Lankan Christmas is complete without this drink made from the much loved King Coconut of the island. Sweet, spicy and refreshing, it's sure to be the perfect pick-me-up through a busy Christmas day.

Ingredients & Method

3 litres king coconut water, 1kg sugar, 150ml lime juice, 25g yeast, 2 sticks cinnamon, 15 cardamom pods, 15 cloves, powdered nutmeg

Crush the spices in a food processor or with a good old fashioned mortar and pestle. Mix them together with the lime juice and yeast before adding it to the coconut water - cover the lot and leave it to ferment for at least 10 days. When it's ready, strain the mix and add caramalised sugar before bottling and leaving for another 3 weeks - don't tighten the lids of your bottles or they might explode!
